CA Dreamin’ of Pork Chops: Junior Chefs Put Pork Center Stage at the California State Fair

California pork chops took center stage at the California State Fair this summer as the California Pork Producers Association sponsored the “CA Dreamin’ of Pork Chops” Junior Chef Challenge, bringing three talented young chefs to the Cooking Theatre for a live culinary competition.
The challenge invited competitors to create an original recipe centered around a pork chop while incorporating the creativity, flavors and agricultural bounty of California. With just 45 minutes on the clock, each Junior Chef prepared their dish live in front of a State Fair audience and panel of judges.
This was an opportunity to put pork in the hands of young cooks and showcase how approachable, versatile and exciting pork chops can be for families cooking at home.
Each competitor started with the same center-of-the-plate protein but took their dish in an entirely different direction, showcasing just how versatile a pork chop can be.
First Place: River Nichols, “The Golden State Sunshine Glazed Pork Chop”

River Nichols captured first place with a dish that embracing the “CA Dreamin’” theme.
River pan-seared a thick-cut bone-in pork chop and finished it with a sweet and tangy citrus-honey glaze featuring California oranges, lemon and wildflower honey. Fresh blackberries and toasted California walnuts added another layer of flavor and texture.
The pork chop was served over a creamy mashed California yam and cream cheese swirl and topped with asparagus, creating a colorful plate filled with California agricultural products.
From citrus and berries to walnuts, honey, dairy and fresh produce, River’s dish brought the bounty of the Golden State together around a pork chop.
Second Place: Paige Hallihan, “The Cali Claw”

Taking a completely different approach with her cleverly named “Cali Claw.”
Paige transformed a bone-in pork chop by making several cuts into the meat to create the appearance of a bear claw, then coated it in a seasoned panko breading featuring bourbon peach and red jalapeño garlic seasonings before cooking it until golden brown.
Her pork chop was paired with a fresh California-inspired salad featuring spring greens, arugula, Pink Lady apple, avocado and basil, tossed with a citrus-honey dressing made with lime, lemon, orange and honey.
Seared peaches, bacon, citrus and a balsamic glaze finished the plate, bringing together savory, sweet and fresh flavors in a creative take on the challenge.
Third Place: Cora Nixon, “Cora’s Awesome Honey Garlic Pork Chops with Loaded Mashed Potatoes and Garlic Butter Sautéed Asparagus”

Cora brought a hearty, comfort-food-inspired dish to the competition with her honey garlic pork chops. After searing the pork chops, Cora created a sauce using butter, garlic, honey, red wine vinegar and red pepper flakes, returning the chops to the skillet to soak up the sweet and savory flavors. She completed the meal with loaded mashed potatoes featuring cream, cheese, sour cream, green onions and bacon, along with asparagus sautéed in homemade garlic butter.
It was a great example of taking familiar flavors and ingredients and building them into a complete pork-centered meal.
One of the highlights of the Junior Chef Challenge was watching three young competitors confidently prepare pork in front of a live audience. In just 45 minutes, each transformed a pork chop into a completely different dish, showcasing the versatility of pork and the many ways it can be prepared at home.
The “CA Dreamin’ of Pork Chops” theme also encouraged competitors to look beyond the center of the plate, pairing pork with fruits, vegetables, nuts, dairy, honey and other ingredients that celebrate California agriculture.
